Etherington’s Butchery Academy is Cornwall’s first bespoke butchery school drawing  upon over 60 years of expert knowledge from nose to tail.

The hands- on courses are held in Etherington’s Butchery Classroom in Wheal Rose, Scorrier, Cornwall. The courses offer students the opportunity to get stuck into butchering meat, learning about different and delicious cuts, quality control and the skills of knife handling. Tutors guide students from nose to tail and start to finish as they tackle pork, beef, lamb, sausage making or knife skills.

There are five different courses to choose from and students can have a half day or full day of teaching. From making your own sausages to cutting the finest fillet of beef, courses are designed to give you a good knowledge of the carcass and the dexterous skills to tackle it in the kitchen.

Situated in a bespoke building, the classroom sits adjacent to Etherington’s Farm Shop. The classroom is part of a huge investment created in 2012 to innovatively expand the Brian Etherington Meat Co. family business and to future proof the traditional skills of butchery in Cornwall. This is further supported by a passion for provenance and offering you the chance to learn.

Etherington’s Butchery Academy is affiliated with Cornwall College teaching students the traditional profession of butchery, and is popular with foodies, independent farmers and professional chefs. Completion of the course gives the student an Edexcel qualification as well as accomplished artistry and confidence with meat.

Each student will recieve an Etherington's Butchery Kit to get them started in the kitchen, as well as some sample cuts of meat that they have butchered to take home.

A whole day lesson costs £135 while a half day costs £70
